Strawberry Pavlova

Ingredients: (Servings:8)
* 3 egg whites
* 1 pinch cream of tartar
* 3/4 cup granulated sugar+ 4 tablespoons
* 1 teaspoon vanilla+ 1/4 teaspoon
* 2 cups whipping cream
* 4 cups strawberries (can substitute raspberries, peaches or blueberries)
*optional 1/2 teaspoon almond extract
Directions:

Prep Time: 30 mins

Total Time: 2 hrs

1. In a large bowl, beat egg whites. Add cream of tartar until firm peaks form. Add sugar, 1 tablespoon at a time, until glossy.Add vanilla and beat to incorporate..
2. On a baking sheet (line with foil first), then spread meringue into a 8 inch circle, Form a ridge by pushing up edges.
3. Bake at 275 degrees for 1 1/4 hours or until firm. Turn off heat and leave in the oven to dry. Remove foil, and let cool. Place on dish.
4. Just before serving, whip cream with 4Tblsp Sugar and 1/4 teaspoon vanilla, then spread over meringue and cover with sliced strawberries.. Cut into wedges.
